Simply Rich Shortbread

Is Danish butter cookies = shortbread? I don't know...do you know?


Aromatic Rich (i.e. fat) Shortbread
Every year during CNY celebration, i never fail to buy tinSSSSSS of danish cookies and savour them through out the 15 days of celebration. I just love the buttery taste that lingers on your tongue even after an hour of consuming these sinful cookies...somehow the rich butter flavor made me felt like my life isn't empty at all...ok...pardon my little drama here:) I found this easy shortbread recipe online and i have to admit, i found the ingredients too simple, too few...and too easy...i hesitated. But I'm curious and so, i gave in and decided to try this easy recipe.

Simply gather the following items:
  • 250g pure butter (DB used Pure Australian Butter)
  • 1/2 cup of icing sugar
  • 4 tbsp of cornflour
  • 1 1/2 cup of plain flour
Cream butter and sugar until pale yellow in color. Sieve in cornflour and plain flour into the creamed mixture. Mix thoroughly until the mixture becomes a soft dough. Take a teaspoon of the soft dough and roll lightly in between your palms into a ball. Place the dough onto the parchment paper in the baking tray. Lightly press the dough with a fork. Repeat with the rest of the dough. Bake the cookies in the preheated oven of 155DC - 160DC for 20 minutes. (Monitor the cookies after 15 minutes in the oven to prevent the cookies from getting burnt at the bottom).

Verdict: There's always a say "Good Food never comes EASY..." This statement is totally wrong in this recipe. Easy and GOOD!!! Awesome!!

Fair Banana...if you are reading this, yes...i am tempting you with these babies in exchange for a dinner on Friday night...hahahahhaha
